1 tablespoon oil
1 clove minced garlic
1 teaspoon minced ginger
1/2 pound lean ground pork
1/2 pound minced or ground chicken
1/4 cup Shiitake mushroom, softened and chopped very fine
3 tablespoon Hoisin sauce
2 tablespoon ketchup
1 tablespoon sugar
1 tablespoon chili paste with soybeans (Chinese)
1 teaspoon soy sauce
Salt to taste
1/4 cup water
1 teaspoon cornstarch
1 green onion, chopped
1 large head iceberg lettuce leaves, washed, well chilled, and separated for wrapping.
Sauté garlic, ginger, chicken and pork in 1 tablespoon of oil. Add onion and Shiitake cook for 1 minute. Add hoisin sauce, ketchup, sugar, chili paste, soy sauce and salt, stirring constantly for 1 more minute. Mix cornstarch in water then add to meat mixture and cook until thickened. Turn off heat and add green onion.
Serve a top lettuce leaves, folded over as appetizer.
